Career Field – Food Technology/Nutrition

Ever wonder how to calculate calories, total fat, carbohydrates, fiber, sodium, and protein in your diet? Each and every food that we eat has a unique composition of nutrients, unique to that food. We will develop fun ‘wrap’ sandwiches for a unique restaurant concept to learn how the missing and matching of ingredients can change the nutrient profile for a particular food item. We will learn how the nutrition profile for a food relates to the marketing of a new food product.

Leader - LuzAna Osbun

LuzAna Osbun is a research and development manager at La Tortilla Factory in Santa Rosa. She has a B.S. in Foods and Nutrition from San Diego State University and several industry certificates.

Co-Leader - Elizabeth Alvarez

Elizabeth Alvarez has a B.S. in foods and nutrition from San Diego State University. She is a research and development technician II at La Tortilla Factory. She enjoys running, snowboarding, traveling and hanging out with her family and friends. Elizabeth will be running in her second marathon race this year. While at San Diego State, Elizabeth served as an officer in the Student Nutrition Club.

Co-Leader - Kimberly Plum

Kimberly Plum has a B.S. in nutritional science from Cal Poly, San Luis Obispo. She holds several certifications including hazard analysis and critical control point (HACCP), pest control and auditing, and Inspecting Food Plants. Kimberly has seven years of food manufacturing experience in quality control and research and development.

Co-Leader - Ruben Berber

Ruben Berber is a research and development technician at La Tortilla Factory in Santa Rosa. He is a graduate of the American Institute of Baking, Manhattan, Kansas with a specialty in ingredient and baking technology. He is hazard analysis and critical control point (HACCP) certified. Ruben enjoys playing soccer, basketball and running.
